Under the direction of the Executive Chef, the Sous Chef prepares high-quality meals in a safe and timely manner. This role requires a solid understanding of food service procedures and the ability to perform all kitchen duties in a professional, courteous, efficient, and organized way.
KEY DUTIES
- Preparing food in accordance with the established menus and established standards for portion control, temperature, quality, plate presentation, food safe practices, timely delivery and minimizing all leftovers.
- To provide creative input to menus, food preparation methods and special event menus
- Receive all food and supplies and check delivery prior to signing, problems noted and reported. Audits food temperature, fridge and freezer temperatures
- Ensure food is safely served, stored and properly labelled and dated after receiving it to avoid spoilage and facilitate proper rotation.
- Regularly monitors resident satisfaction by talking with residents in the dining room and provides regular feedback to the Executive Chef.
- Work in compliance with all public health regulations.
- Maintains work area in an orderly and sanitary condition. Participate in the proper cleaning of the kitchen including kitchen equipment, counter tops and beverage centre.
- Oversee the work of Assistant Cooks, Kitchen Aides & Dishwashers
- Conducts kitchen audits with and for the Executive Chef
- May assume the duties of the Executive Chef as designated during absence
- Any other duties as directed by Management.
DESIRED SKILLS AND EXPERIENCE
License/Designation:
- Food Safe Certificate
- Criminal Record & Vulnerable Sector check
Experience:
Must be knowledgeable and experienced in:
- Creative food preparation, accurate portion control
- Asian and European and contemporary cuisine
- Food preparation in accordance with menus.
- Use of kitchen equipment.
Education:
- Must have a Canadian high school graduation or equivalent.
- Must have a formal training – Red Seal Chef is an Asset.
- Must be able to read, write, and comfortably communicate in English.
- Must understand oral and written instructions.
- Must have completed Food Safe I.
- Successful completion of WHMIS
